Sour - Ale | 9.7% ABV

Belgian-style sour ales heavily influenced our Sour Program in the beginning, and Darken is a take on an "old ale" or Flanders Oud Bruin style. We add nearly the entire spice rack to this ale, including star anise, ginger, grains of paradise, black pepper, and coriander. Formerly named Dantalion (the powerful Great Duke of Hell, if you’re curious), Darken is complex ale with an approachable tartness and flavors of spice, fruit, caramel, and chocolate. Darken has a medium-low body, with a dry, spicy finish.

Blend 2 with Motueka & Idaho 7 Hops

Fermented and aged in oak barrels with our house culture of saison yeasts, brettanomyces' and lactic acid producing bacteria. This is our second batch/blend of this beer. This version is a little higher in alcohol than blend 1, mostly because it is drier. This beer is all about the balance of bitter and tart. It's very drinkable and almost tastes like an IPA. The multiple brettanomyces strains in our mixed culture take the flavors from the hops and not only preserve them, but evolve them into new and iterating flavors on a daily basis. I'd recommend opening bottles periodically over the course of a year or so to see how the flavors evolve. I anticipate this beer will taste great for a few years to come, but will peak in 4-8 months. This is a distinct batch of beer from the first blend (unlike the ++good series). But it's still the same recipe and process, so it would also be fun to taste it next to batch 1.  Cheers!

Off the Beaten Path 2 was inspired by the resurgence of heirloom grains being harvested and malted. Riverbend Malt House out of North Carolina did just this with the rye varietal, Wrens Arbuzzi. Fermented in stainless steel and bottled conditioned with our proprietary mixed Saison culture. OTBP 2 showcases a bright tart character paired with notes of peppercorns, herbaceous spiciness, and fresh lemon zest.

Our Berliner Weisse is created using a proprietary yeast blend. Over the course of 3 months, this beer naturally becomes tart and full of character. A unique solera method ensures consistency and perpetual motion. No kettles we soured in the making of this beer.

Sour - Berliner Weisse | 4.7% ABV

Imagine yourself in Berlin’s Tiergarten enjoying this refreshing Berliner Weisse inspired beer on a warm summer’s day. Bretta Weisse honors the traditional beverage of the great Prussian capital, Berlin. Fredrick-the-Great was trained to brew it, and Napoleon’s troops called it “The champagne of the North”. Firm estery notes of stone and tropical fruit lead to Funky, yeasty, citrus aromas.  Soft cereal and Oak flavors are enveloped by a firm acidity and tartness. The finish is dry and crisp; a thoroughly enjoyable beverage. At 4.7% ABV, One could imagine enjoying several Bretta Weisse's in the Tiergarten, or anywhere else. A santé!
