In order of harvest, we will brew with fresh Centennial, Simcoe,™ Citra,™ and finally Mosaic™ hops. Field to Ferment represents a colossal collaboration between the brewery and our hop farmers. No one has attempted to brew fresh hop beers throughout the entire season. We will make countless trips between the fields in Yakima and the brewery in Fremont, loaded with tens of thousands of pounds of fresh, juicy hops. Nothing is fresher, nothing is better for a brewer. We make Cowiche Canyon ale in partnership with hop-growing wizards from the Yakima Valley in an effort to expand the organic hop industry in Washington State...Because Organic Hops Matter! As illustrated by the avalanche of social media requests, that is Stone Xocoveza, an insanely delicious take on Mexican hot chocolate brewed with cocoa, coffee, pasilla peppers, vanilla, cinnamon and nutmeg. First brewed in 2014 with San Diego homebrewer Chris Banker after his recipe won our annual homebrew competition, this imperial stout is layered with smooth roastiness, semisweet chocolate and a touch of spice. Thanks entirely to you, this creamy, mocha stout has gone from initially being a one-time offering to a yearly tradition. Commercial Description:

There aren’t many kiwis growing in Indiana and they aren’t typically added to beer, but when we started making sour ales, our forward-thinking brewers wanted to do something different. They hand peel the fruit and add it whole to the base sour ale that had been fermenting for more than eight months in white oak barrels. The result is a fruited ale that is hazy and golden/straw in appearance upon pouring, with zesty amounts of carbonation. Fresh kiwi and tropical aromas combine with floral and wine-like notes, with rich kiwi flavors following in the taste, accompanied by refreshing tartness and a dry and tangy finish.
